Anyone got any tastey, healthy, and inexpensive vegetarian and/or vegan recipes they'd be willing to share? :)

I know I have one vegan recipe that is VERY tastey and very healthy. :)  But i need more! :)  MORE!  Come impress me! :)

It's been my experience that most vegan/vegetarian recipes are expensive.

However, I tend to just throw together various beans, rice, mushrooms, onions, perhaps a few other veggies, and some spices.

I'm usually pretty good at coming up with stuff, but I've been stuck in a rut lately. :(

Try combining a couple packages of frozen broccoli with a can of cream of mushroom soup, some cheese, and a bunch of other sliced veggies.  (beans, mushrooms, onions...eggplant is good.)

I love to do stuff like that in a casserole dish.  I usually put chicken in mine as well, but it's easy to replace that with anything else you like.  Mix it all up, cook it until it's all hot and warm and the cheese is melty and brown.  Very good, very cheap.

Same with rice.  Do rice, some water, some sort of creamy soup from a can, and mix in lots of veggies and cheese.

I like to throw some onions, chopped pineapple, chopped apples, raisins, walnuts and firm tofu into a fry-pan with a bit of water (not enough to cover it all, but enough to keep it from sticking to the bottom of the pan) and simmer it until the apples are soft and then add curry powder to taste.  I'll add cooked rice to it too...

(sorry, I don't go for exactly amounts XD)

Bree, I do that already actually.  I usually pour it over noodles. :-D

you should try grilling one large portabella mushroom and then put it on a bun. We like to put a bit of mayo on it to but it is really good. Of course we love Portabellas. heck you could grill several vegis and make a meal of it. We have started to cut beef and pork from our diets so I know how it can be to find things inventive for dinner. My husband loves when I make greenbeans my way. I saute them with butter and onions. Of course I buy this seasoning that Penzies makes. It's called Fox Point. It's good on almost everything. Exspecially mixed with sour cream, makes a wonderful dip.

We love portabellos, but there again, they are expensive.  I'll check out that seasoning, though most, I find, have too much salt. :-/

Something I recently discovered and absolutely love:

Take tomatoes and/or tomato juice and place in a blender.  Get a chunk of very soft tofu, cut it into little pieces, and put in the blender as well.  Blend them together.  Heat the mixture up on the stove.

Yum!

So far, I've only blended tofu and tomato together, but apparently tofu is a good substitute for cream in any creamy vegetable soup.  I've eaten the mixture by itself, added corn to it, and also have made it a thick sauce for pasta.

Even my boyfriend, who doesn't really like tofu, thought it was great.

I don't really like tofu either.  However, I might be willing to try that.  Hm.  Is tofu cheap?

Yeah, Quorn's not easy to find here, though I know a couple of places carry it.  Just nowhere nearby.

I haven't tried bubble and squeak.  Haven't heard of them before now!
