I've got a couple potlucks to go to in the next week and I need some help! I'm an all right cook but I tend to cook the same things over and over again. I'm also kind of lazy, so I like simple, extrordinarily tasty things that highlight the tastes of the ingredients rather than things with complicated sauces. And I tend to make meal-in-one-dish recipes. Any suggestions for good potluck foods?

To get the ball rolling, here's two dinner suggestions of my own... not exactly pot-luck material, but they're good stand-by favourites of mine :)

CRUSTLESS QUICHE

1/2 to 1 cup veggies (I like zucchini, shredded, peppers, mushrooms, and tomatos) (also works well with anything in the fridge)
teaspoon butter
5-7 eggs
1 bun
1/2 cup cheese
spices (pepper, cajun mix, italian herb mix... whatever you want, really)

Put the butter in a frying pan and melt, then gently cook the veggies until they're as cooked as you want them. Meanwhile, break eggs into a large bowl and mix with chunky crumbs of that bun you bought and the cheese. Once the veggies are cooked, let them cool for a few minutes before adding them to the egg mixture. Mix. Then put in a greased pie pan and bake at 350F for 40-45 minutes, or until the egg is set all the way through. Let it sit for 5 mins after pulling it out of the oven and eat it with a fork. Swiss cheese instead of (or supplementary to) cheddar is also a tasty option.

SPAGHETTI WITH TUNA, OLIVES & CAPERS

1 can diced tomatos
1 can tuna
1-2 cloves garlic
a few mushrooms, diced
10-20 olives, pitted & chopped
1-2 tablespoons capers (no caper juice)
italian herb mix (or basil, pepper, and oregano to taste)
spaghetti (cooked)

Dump the can of tomatos into a shallow pan and let boil until reduced to a nice saucy consistancy. Add the mushrooms and let cook until the mushrooms are done. Add the capers and olives and herbs. Let simmer for a while to let the flavours meld. Then add the tuna from the can (drained) and let simmer until the tuna is nice and hot. Serve over spaghetti. Eat with a fork.

Brownies from a box  ;)  And then cut them into small little squares and you have brownie bites!  It's a good finger food

Make brownies from a box, but when they are half cooked, top them with broken-up graham crackers, chocolate bars cut into small pieces, and mini-marshmallows, then finish baking: S'more Brownies!

Cheats Chilli

1 large Onion
1 large tin baked beans
1 packet Minced Meat/Quorn Mince/Soya  Mince
1 tsp olive oil
pinch chilli powder to taste
rice, grated cheese, soured cream to serve

Chop and fry the onion for two min, then add the mince.  Cook until browned.  Then stir in the beans and chilli powder and cook on a low light for 15-20 min.

Serve with rice, add cheese and soured cream if desired.

Mashed Potato Enchiladas

1 lb ground beef
2 bags frozen, cubed hashbrown potatoes (or you can make your own homemade/instant mashed potatoes!)
cheese
tortillas
enchilada sauce (about 2 big cans should do)

Throw the frozen potatoes into a big pot w/ a bit of oil and start cooking.  While that's unthawing, cook up hte ground beef and set aside.  Once the frozen potatoes start getting mushy, stir it around and around so it turns into mashed potatoes.  Pour a little bit of enchilada sauce in the potatoes and add the ground beef and as much cheese as you want.  Stir it all together in the big potato pot and set aside.  Pour your enchilada sauce into a big skillet and heat.  Dip the tortillas into the sauce and put into a 13x9 baking dish.  Add the potato/ground beef/cheese mix and wrap up into an enchilada.  When you've filled your baking dish, pour some of the sauce over the enchiladas and put some cheese on top.  Bake about 10-15 minutes in the oven to ensure the cheese is melted and everything is hot and yummy.

It's a bit messy, but soooo worth the cooking!  :cheers:
