Greens do stop rising when they/their riders get older, but there's no fixed age. It generally depends on dragon and rider health.

You can reinvent your character. "What if they were born in this time instead?" It can be a very interesting exercise to see what changes and what stays the same. I've played a few alternate versions of N'vanik before, and even his original concept was "what if Sawyer from Lost was a dragonrider."
